TASTING NOTES Parasol is a wine barrel aged tart ale with Meyer lemon, basil, and ginger. We took our Wit recipe and added it to 3rd use wine barrels. We pitched lactobacillus culture and allowed the bacteria to consume the sugars and produce lactic acid. This process took over a year to develop the level of tartness we desired. Once tart, we added basil, ginger, Meyer lemon juice and zest. The result is a tart, lite beer with a complex yet balanced flavor that includes the flavor of all additions in equal parts
